...chocolate sandwich cookies

I had a few requests for this recipe after I made these cookies for my summer market, so I thought I'd share it with all of you...

they're really quick & easy...
You'll need... 2 packages devil's food cake mix
                      4 eggs
                      1 cup shortening

 blend together really well...

 I use a cookie scoop to make them all the same size...if you want smaller cookies, roll them in a ball

 Bake for approx. 10 minutes...they should still be soft

 For the icing...
6 Tbsp cream cheese
1/3 cup butter, softened
1 3/4 cups confectioner's sugar
1 Tbsp cream
1 tsp vanilla

 blend together well...

 once cookies are cooled, put icing between two cookies, and sandwich together...
